Christmas Gift Basket #1: Vanilla Gift Balance

You’ve probably heard the story about how your Christmas gift basket includes vanilla ice cream. 

If you’re a vegan, you might wonder what it’s all about. 

But it’s really easy to make your own vanilla ice creams. 

The recipe is actually pretty simple. 

1 cup of vanilla (you can use coconut oil, but coconut oil is vegan and has been used for decades as a vegan butter), 1 teaspoon vanilla extract, 1 cup of ice cream, and 2 tablespoons of almond milk. 

You can make it vegan with almond milk, but I personally like to make my own almond milk because it gives it a more nutty flavor. 

Here’s what you’ll need:1. 

Coconut oil (the more you use, the better)2. 

A can of vanilla icecream, which you can buy in a wide variety of flavors.3. 

Almond milk (I used coconut milk and it was the perfect consistency for this recipe)4. 

Melt 1 tablespoon of almond butter in a pan over medium heat. 

I used a food processor, but you can also use a stand mixer if you want.

Add the coconut oil to the pan, and mix until the mixture starts to thicken. 

6. 

Transfer the mixture to a container and add 1/4 cup of the melted coconut oil. 

7. 

Repeat until the ice cream is ready. 

8. 

Mix in the vanilla extract and almond milk mixture. 

9. 

Place the container in the freezer for 30 minutes. 

10. 

Bring the mixture back to room temperature and allow to thaw for 15 minutes.
